Apple Pie Bread

Apple Pie Bread

1/2 c butter, softened
1 c sugar
1/2 c buttermilk
2 tsp baking powder
2eggs
1 tsp vanilla
2 c all purpose flour
1/2 tsp salt
2 c shredded, peeled apples
1 c chopped walnuts
1/2 c raisins

Streusel-Nut topping
1/4 c brown sugar
3 tbsp flour
2 tbsp butter

Mix sugar and flour together. With pastry blender cut in butter until mixture resembles coarse crumbs. Stir in walnuts.

Preheat oven to 350. Grease the loaf pan.

In large bowl, beat butter with electric mixer on medium for 30 seconds. Beat in sugar until combined. add buttermilk and baking powder;beat until combined. Add eggs and vanilla, beat until combined. Add flour and salt, beat until combined. Hand stir in apples, nuts and raisins.
Spoon batter into pan. Sprinkle Streusel Nut topping over batter. Bake for 60 minutes or until wooden toothpick inserted near the center comes out clean.
Cool on wire rack for 10 minutes. Remove from pan to cool completely. This makes one loaf.

This recipe came from Living the Country Life. I haven't tried it yet, but it looks very good. Anything cooked with apples turns out great if you ask me.
